I’ve seen this recipe floating around Pinterest for a while now and I’m kicking myself for not making it sooner! The truth is that this recipe calls for a lot of things that I don’t have hanging out in my cabinet on a regular basis so I was skeptical of purchasing all these ingredients and then not liking how they tasted. When Kaitlyn came to town last weekend and had some of the energy bites with her, it was the perfect chance to try them without buying everything first. And I’m here to tell you that they’re delicious, healthy and an easy snack. Perfect for a breastfeeding mama or a daddy who never has time to sit down to eat lunch at work.
In case you’re like me and not sure where to find things like blue agave nectar (yeah, that’s a thing apparently) just check the baking aisle. I found all this crazy stuff there. And when you mix it all together, it tastes delicious!

Energy Bites
Time
prep time: 10 minutes; 10 minutes
total time: 50 minutes
Ingredients
1 cup old fashioned oats
2/3 cup coconut flakes, toasted*
1/2 cup peanut butter
1/2 cup ground flax seed
1/2 cup chocolate chips
1/3 cup blue agave nectar (honey can be used instead)
1 tablespoon chia seeds
1 tsp vanilla extract
Directions
Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for 30 minutes.
Once chilled, roll into one inch balls. Store in air tight container.
*Coconut flakes can be purchased already toasted. For a much lower price, you can purchase coconut flakes that aren’t toasted and toast them on your own. I put mine on a cookie sheet for about 3 minutes in the oven that was already at 400 degrees. Kaitlyn toasts hers on the stove top.
