Fact: my husband loves to eat.
Fact: I don’t love to cook.
It’s not that I hate it, it’s just that I have too much of my mother in me to enjoy spending 3 hours in the kitchen for something that will be devoured in 3 minutes. I’ll never have any gourmet recipes to share with you.
As much as I love the crockpot, I don’t want soup {or soup-ish food} every night. So I’m kinda picky when it comes to the crockpot.
I can’t take any credit for this recipe… but I can share it. It was given to me by a friend at work when I commented on being in a dinner rut. {I cook the same few recipes on repeat.}
Ingredients:
4 frozen chicken breasts
2 hamburger buns
Buffalo sauce {1 bottle}
Sliced provolone cheese {or pepper jack, in this case}
Morning:
Put 4 frozen chicken breasts in crock pot
Set to keep warm and leave all day
Evening:
When I get home from work, the chicken looks like this
Preheat oven to 350 degrees
Place shredded chicken in separate bowl and cover with buffalo sauce
I’ve used both of these sauces
Stir chicken until it’s covered
Place sauce-covered chicken on open-faced bun
Place cheese on top {I think provolone is standard with a buffalo chicken sandwich but I didn’t have any so I used pepper jack, which is my favorite}
Bake for 2-3 minutes or until cheese is melted
Ready to go in less than 15 minutes. Doesn’t get any better than that.
The very first time I made these, I told David, “I hope you like this because they’re really easy so they’re about to get added to the rotation.” I made it a couple of weeks ago when I had open house at school and knew I’d be home late. David thought it was hilarious that I was taking pictures of each step {he’s still getting used to the blog idea}.
So, he decided to add his own. “Blog that!”

I posted this recipe last week and the pictures showed up as blue question marks so if you saw it then, sorry for the repeat. It’s a fairly new recipe to me but doesn’t count as my “new” recipe this month. Hope you enjoy it as much as I do!
I’m obviously cooking this for two but I’ve also done it on a much larger scale when we’re at the beach with my family. So, if you’ve got a whole crew, just double, triple or quadruple everything. We usually get 1-2 leftover meals out of this.
